The Spring season typifies and awakens a time for inspiration and energy.Here are some tips to revitalize and energize your mind and body for Spring.

The taste is green- Slightly peppery with a touch of clove. It gives a flat taste a bit of sparkle, great in risotto and polenta.
Thyme Grilled Swordfish
Thyme and garlic-scented olive oil is great on eggplant, bell peppers or tofu, as well as fish.It lets youperfume grilled or broiled foods without worrying about delicate herbs burning and spoiling the taste.
A small handful of fresh thyme sprigs
2 cloves of garlic, peeled
2 tbsp olive oil
1 pound swordfish (with no dark parts) about ½ thick
Put the thyme into a small sauté pan and gently pound it with a pistol to release its fragrant oils. Add the garlic and olive oil, and cook over medium-low heat until warm and fragrant, about 2 to 3 minutes. Remove the pan from the heat, discard the garlic, and let the oil cool, covered, before using.
Prepare the grill or preheat the broiler. Brush both sides of the swordfish with about 2 teaspoons of the thyme oil. (Brushing the fish instead of the grill will help keep the fish from sticking.) Grill or broil the fish about 5 inches from the heat source until cooked through, about four minutes on the first side and two minutes on the second side.
